VINEYARD LOCATION: The “Le Vignoble des Sarrottes” single vineyard, in Crézancy-en-Sancerre. Domaine Sautereau works around a quarter of this 5-hectare vineyard.
SOILS: selection from plots of 15 to 50 year-old vines, grown on our famous “Terres Blanches” soils. These Jurassic clay-limestone soils have the peculiarity of being very rich in fossilised shells and oysters. The name “Terres Blanches”, or “white earth”, comes from the whiteness of these soils when exposed to the sun’s rays.
GRAPE VARIETY: Sauvignon blanc.
VINIFICATION: Fermentation temperatures are carefully controlled to obtain a fruit-driven wine. Three types of vessels are used for maturation: stainless steel vats, amphorae and concrete “eggs”, in order to best express the identity of the terroir. The wine is aged on fine lees for around a year to gain texture and complexity before final blending.
TASTING NOTES*:
Appearance: Pale golden-yellow hue.
Nose: Intense aromas of exotic fruits such as mango, as well as white peach. Hints of white flowers bring beautiful subtlety and freshness.
Palate: Great balance of freshness, body and vivacity. The finish is very persistent with a pleasant note of salinity that adds complexity to the wine.
FOOD PARING SUGGESTIONS: Matches perfectly with delicate white fish, either cooked or raw.
RECOMMENDED SERVING TEMPERATURE: 10°C to 12°C.
